Ingredients
- 100 g dried fruit (raisins, goji berries etc.)
- 150 g almond milk
- 1 tsp vanilla extract
- 2 x 7 g sachets of fast-acting yeast
- 30 g honey
- 400 g gluten-free bread flour
- 1 tsp gluten-free baking powder
- 1 tsp xanthan gum
- 2 free-range eggs beaten
- 1 tbsp ground cinnamon
- 100 g melted unsalted butter (or dairy-free alternative)
- 50 g mixed seeds
- 1/2 tsp sea salt
Instructions

Place the dried fruit in 120ml (4fl oz) warm water and soak for 5-10 minutes to soften the fruit slightly.

Place the water and fruit into the pan of a breadmaker with the remaining ingredients. Stir briefly to mix, place the pan in the breadmaker and select the gluten-free bread programme, Crust: medium. Press start.

At the end of the programme, the machine will bleep to let you know the loaf is baked.

Turn out the loaf and cool on a wire rack before slicing. Top with butter and/or jam and serve.
