These light and fluffy gluten-free doughnuts covered in an irresistible cinnamon sugar coating will run rings around the fried kind!
Ingredients
For the doughnuts
- 150 g gluten-free self-raising flour
- ¼ tsp gluten-free baking powder
- ¼ tsp pink Himalayan salt
- 110 g caster sugar
- 120 ml almond milk
- 2 free-range eggs
- 1½ tbsp extra-virgin olive oil you can also use vegetable oil
- 1 tsp vanilla extract
- non-stick spray
For the cinnamon sugar
- 200 g 7oz granulated sugar
- 1 tsp cinnamon
- 75 g dairy-free butter melted

Preheat the oven to 180ºC/Gas Mark 4.

Spray a doughnut tray with non-stick spray. You can also use cooking oil or melted coconut oil and grease using kitchen paper.

Add the flour, salt, sugar and baking powder to a bowl and mix well.

In a separate bowl, whisk the almond milk, eggs, oil and vanilla extract. Add to the dry ingredients and mix until fully combined.

Add the batter to the doughnut tray, making sure that they are around three-quarters full, then bake for about 10 minutes, or until golden brown. Cool on a wire tray.

To make the cinnamon sugar coating, mix together the sugar and cinnamon.

Melt the dairy-free butter/spread and, using a brush, brush the doughnuts with the melted butter – this will allow the sugar to stick. Dip the doughnuts in the cinnamon sugar mix and leave to dry before serving.
