With only 5 grams of coconut sugar and absolutely no dairy, these gluten and dairy-free chocolate and vanilla muffins are the perfect healthy snack!
Gluten-Free chocolate vanilla muffins

Ingredients
For the vanilla batter:
- 85g (3oz) cornstarch
- 40g (1½oz) gluten-free flour mix
- 2 tsp coconut oil
- 2 free-range eggs
- 1 tsp coconut sugar
- 20ml (¾fl oz) coconut milk
- 1 tsp apple cider vinegar
- 1½ tsp vanilla extra
- 1 tbsp gluten-free baking powder
For the chocolate batter:
- 35g (1½oz) gluten-free 100% dark chocolate, melted
- 25ml (1fl oz) coconut milk
- 10g (½oz) gluten-free 100% dark chocolate chips
- 10g (½oz) cornstarch
Method
- Preheat the oven to 180°C/Gas Mark 4. Grease the holes of a 12-hole mini muffin tin.
- For the vanilla batter, mix all the dry ingredients in a bowl (or in a food processor), then add the wet ingredients and combine. Divide the batter between two bowls.
- Add the ingredients for the chocolate batter in one of the bowls and mix well.
- Drop one scoop of vanilla batter and one scoop of chocolate batter into each muffin hole, decorate with extra chocolate chips, then bake in the oven for 25 minutes.
