Mozzarella sticks are utterly irresistible with their soft, melty centre and crisp and crunchy exterior. Typically coated in bread, these delicious bite-sized appetisers use gluten-free breadcrumbs so everyone can enjoy them.

Gluten-free mozzarella sticks with tomato and herb dip

Serves: 4 | Preparation time: 15 mins | Cooking time: 5-10 mins      

Ingredients

  • 400g /1lb Mozzarella cheese (or alternatively Fontina, Taleggio or Cheddar)
  • 2 eggs – whisked
  • 1 tsp smoked paprika
  • 4-6 tbsp gluten-free breadcrumbs
  • 1 tbsp chopped fresh parsley

For the dip:

  • 1 tbsp olive oil
  • 1 clove garlic, peeled & crushed
  • ½ red onion finely chopped
  • 2 tbsp passata
  • ½ tsp dried basil
  • ½ dried oregano
  • salt & pepper

Method

  1. Pre heat oven to 180°C, 350°F, Gas Mark 4. Line a baking tray with greaseproof paper
  2. Cut the cheese into strips about 4cm long x 1cm wide.
  3. In a dish mix together the breadcrumbs and paprika, salt and pepper
  4. Take half of the cheese strips and dip into the egg, coat with the breadcrumb mixture and then place on the baking tray
  5. In another dish mix together the crushed nuts and parsley
  6. Dip the other half of the cheese strips in the egg, coat with the nut mixture and then place on the baking tray
  7. Bake the cheese strips in the oven for 5-8 minutes taking care they do not over-cook
