Ingredients

  • 100 g unsalted butter
  • 200 g dark chocolate
  • 250 g brown rice flour, sifted
  • 1 tsp gluten-free baking powder
  • 1 tbsp cocoa powder
  • a pinch of salt
  • 2 free-range eggs, beaten
  • 80 g coconut sugar

Instructions

  1. Preheat the oven to 180°C/Gas Mark 4.

  2. Melt the butter in a pan, turn off the heat and add the chocolate. Allow to cool.

  3. In a bowl, mix the brown rice flour, baking powder, cocoa powder and a pinch of sea salt.

  4. In another bowl, mix the eggs with the sugar. Add the dry ingredients a little at a time, then add the melted chocolate and mix thoroughly to combine.

  5. Pour the mixture into a square-lined baking tin and bake in the oven for 25 minutes.
