Gluten-Free Goat’s Cheese Pizza recipe from Schar
Gluten-free goat’s cheese pizza with caramelised onion and spinach. Customise to your taste by adding any extra toppings you like before you put the pizza in the oven.
Caramelised onion, spinach and goat's cheese pizza
Ingredients
- 2 Schär pizza bases
- 2 tsp balsamic vinegar
- 50 g baby spinach
- 1 onion, peeled, cut into rings
- herbs and spices of your choice (oregano, basil, rosemary, thyme, chilli etc)
- 2-3 chopped tomatoes
- 2 tbsp tomato puree
- 50 g mozzarella cheese, grated
- 35 g goat's cheese
- a drizzle of garlic oil
- a pinch of freshly ground black pepper
Instructions

Preheat the oven to 220°C/Gas Mark 7. Place the pizza bases on sheets of greaseproof paper.

Heat the oil and balsamic vinegar in a medium frying pan over a medium-high heat, add the onion and fry for 3-4 minutes until lightly softened.

Place the spinach leaves in a bowl, pour over boiling water, leave for 30 seconds, then drain.

In a small bowl, mix together the tomatoes with the herbs and tomato purée. Spoon the mixture on top of the pizza bases and top with the mozzarella.

Arrange the caramelised onion rings and the wilted spinach on the top, then crumble over the goat’s cheese. TIP Add any extra toppings you like before you put the pizza in the oven.

Place the pizzas on the greaseproof paper in the oven, placing a baking sheet below. Cook for about 15 minutes.

Remove from the oven and drizzle with garlic oil and cracked black pepper before serving.
