Ingredients
- 4-5 large ripe plums, halved
- 100g (3½oz) blueberries
- 1 block of Silly Yak puff pastry
- 1 free-range egg, beaten
Method
- Preheat the oven to 180ºC/Gas Mark 4. Dust the work surface with some gluten-free flour and roll out the pastry. Cut a rough 30cm (12in) circle. Wrap the pastry around a rolling pin, then transfer it to a baking sheet lined with parchment paper.
- Arrange the plums (cut side down) and blueberries on the pastry, leaving a 2.5cm (1in) wide border filling free.
- Fold the border over the fruit, while brushing the pleats of pastry with a beaten egg to hold the pastry in place and also to give the galette a beautiful golden colour.
- Bake in the oven for 25-30 minutes.
