Huevos Rancheros is a classic Mexican recipe that will make a great addition to your Cinco de Mayo themed brunch. The traditional dish that means ‘rancher’s style eggs’ consists of a lightly fried tortilla loaded with Mexican-inspired ingredients and topped with a fried egg.
Ingredients
- 1 tbsp vegetable oil
- 1 gluten-free corn tortilla wrap
- 1 free-range egg
- 200 g black beans drained
- 1/2 lime juice of
- 1/2 ripe avocado peeled and sliced
- 50 g feta crumbled
- Sriracha for drizzling
Instructions

In a frying pan, heat oil over a high heat, add in the corn tortilla and fry for 1-2 mins on each side until crispy at the edges. Then set it aside on a plate.

Next, in a bowl add your beans, add freshly squeezed lime juice, before mashing together.

Then in the frying pan, crack an egg into it to fry to your liking.

Take your plate with the tortilla and spread the mashed beans over the tortilla, then top with the egg, avocado, and feta, before drizzling with sriracha and lime juice.
