Ingredients

  • 250 g SKIPPY Smooth Peanut Butter
  • 2 large eggs
  • 2 medium-sized very ripe bananas
  • 1/2 tsp bicarbonate of soda
  • 1 tsp vanilla essence
  • 2 tbsp runny honey

Optional toppings of choice

  • Dark chocolate chips
  • Raisins
  • Blueberries

Instructions

  1. Heat oven to 200°C or Gas Mark 6

  2. In a blender, add peanut butter and the following 5 ingredients.

  3. Blend until smooth.

  4. Pour batter into a lightly greased standard-sized muffin tin.

  5. Top with desired toppings and bake for 12 minutes or until a toothpick inserted in the centre comes out clean.
