A delicious gluten-free bolognese with a difference – tofu!

Tofu Bolognese
Ingredients
- 1 jar of marinara sauce
- Follow Your Heart Grated Parmesan
- 1 gluten-free spaghetti
FOR THE TOFU
- 1 block of extra firm tofu
- 55 g gluten-free vegetable stock
- 3 tbsp tomato puree
- 2 tbsp tamari
- 1 tbsp oil
- 2 tbsp nutritional yeast
- 1 tbsp garlic powder
- 2 tsp chilli powder (heaped)
- 2 tsp onion powder
- 1/2 tsp pepper
- 1/4 tsp salt
- 1/4 tsp liquid smoke
- 1 tsp cayenne pepper
Instructions

Preheat the oven to 180oC/Gas Mark 4.

Press the tofu block for 5 minutes.

In the meantime, combine the remaining tofu ingredients together in a large mixing bowl. Whisk to combine and set aside.

Crumble in the tofu with your hands and mix well to coat.

Line a baking sheet with parchment paper or a silicone mat.

Spread the tofu mixture evenly on the baking sheet with a spatula, then bake for 25 minutes, stirring occasionally.

Boil water for the pasta, then add the spaghetti, cooking according to the packet instructions.

Heat up the marinara sauce on a low heat in a medium pan on the hob.

When the spaghetti is cooked, drain and set aside.

When the tofu mixture is ready, add to the simmering sauce and mix well.

Serve the tofu with the spaghetti and top with Follow Your Heart Parmesan.
